Saint Patrick's Day pastry


Saint Patrick is celebrated during May at Ireland and other countries. Despite here at Finland we dont really have traditions for many different saints, I had an idea to prepare this little sweet pastry for St. Patrick. Marzipan and pistachio nut worked nicely together.

This pastry is really easy to prepare. Marzipan is commercial, wich gives nice smooth surface. Pistachio can be replaced with other, but I personally liked how it gave nice green addition for edges too. This pastry is supposed to be eated with spoon, so it is wise to use spatula or such while moving them. They are not supposed to be hard or otherwise cookie-like.

Dough

200 g butter
½ dl caster sugar
4 dl all-purpose flour
1 egg yolk

Beat butter and sugar well together. Add flour and 1 egg yolk. Roll between two parchment paper and bake in oven for 10 mins at +200 C degrees. Allow to cool before cutting. Notice: this dough crumbles easily!

Filling

Cream cheese
Powder Sugar

Marzipan

Green coloured commercial marzipan

Decoration
Pistachio nut

Preparation

After all parts are ready, it is easy to just add them all together. Pistachio nut is best to leave quite coarse, because it will give intresting detail for edges, while surface is smooth and decorated. 

Marzipan is still troublesome task for me, since I dont have talent to prepare good enought myself. What I would like to see smooth surface like commercial version have, mine been less pretty so far.
