Vanilla shortbread cookies

Sometimes it is worth of risk just try out some recipe what is usual cookie recipe. Shortbread style cookies usually works fine, since they do not require leavening agent due high butter content. Only tricky part might be molding, since butter gets very soft after handling.
Vanilla shortbread cookies

Recipe is from BBC 
325 g all-purpose flour
200 g cold butter125 g fine sugar
2 tsp vanilla paste or 1 whole vanilla pod
2 egg yolk

Mix flour and butter and add other ingredients. Try avoid kneading, only mix all well and then proceed. 

For cookie molds it is best if you allow dough cool enough before molding. Even then this type of dough can be little troublesome to work with. I would not suggest no other mold type than small cookie press for the job. Of course it will be easier after few baking attempts and you might try little bigger molds. These are quite butter-rich cookies, so small shape is good for portion sizes too. 

Bake in 170 C degrees for 15-20 minutes or untill they get little golden brown on edges. Allow to cool and enjoy!
